Climate change has such a large grasp on our daily life, from abnormal weather to life threatening pollution. But can it reach as far as our modern diet? My favorite food has always been french fries. I have never questioned how the perfectly fried pieces of potato had landed on my plate. After being harvested, the potatoes they are sent to storage facilities, waiting to be transported to a restaurant or a grocery store. During the wait, the potatoes need to be regulated in cool temperatures and proper humidity. If not they grow tubers, making it undesirable to consumers. As climate change increases the heat, tubers continue to grow. And that is just one side to the potato crisis. The increasing temperature affects the crops from the source; increasing pests and making soil unsuitable for the plant. Climate change could result in the potato industry being unable to provide the crop that serves the popular side dish everyone loves.
